Executive Chef – Head of Food Operations

Salary: Up to £35,000 p.a.

Titanic Brewery currently run 10 pubs and Café Bars across Staffordshire and Derbyshire which serve simple home cooked, fresh pub food to compliment the fantastic range of cask ales that we brew. By the end of July Titanic Brewery will have increased its pub estate to 13. Our food offer is very much exceptional ‘pub grub’ rather than cordon bleu!  We serve food 7 days a week.

To help deliver our expansion plans we are looking for an experienced cook / chef to become the company’s Executive Chef overseeing the food operation in all of our sites. This will include menu design, costings, supplier sourcing and ensuring all kitchens are adhering to EHO and Health & Safety policies. This is a new position and will be a permanent, full-time role to include evenings and weekend work. As the head of our food operation the successful candidate will have an appetite for local food, enthusiasm for proper pubs and commitment to supporting the local community.

It is essential that the suitable applicant has commercial culinary skills matched to an outgoing personality allowing them to make the most of the freshest local ingredients available. You will have a strong willingness to maximise your skills and that of the kitchen teams in each of our sites.

Other requirements of the Executive Chef:

  • Previous multi-site experience essential
  • Experience working with fresh, local produce
  • A friendly and approachable persona is an absolute must. A good sense of humour is needed to mirror what can only be described as an ‘enjoyable’ vibe within the team
  • Up to date food hygiene and NVQ certificates
  • Able to demonstrate a track record in profitable development of menu design, costing dishes, stock ordering and control to maximise and improve margins
  • Excellent organisational and communication skills
  • Ability to work within a team as well as the ability to work on your own
  • Driven and self-motivated
  • Must live within close proximity of Staffordshire, our heartland, and prepared to travel between sites.
